La Tarte Tropézienne
Remarquable
1955. A young Polish baker named Alexandre Micka was selling his cream brioche to the film crew of "And God Created Woman" when Brigitte Bardot took a bite and said simply: it needs a name, call it la tropézienne. The name stuck. The recipe did too, and by some stroke of deliberate caution it was never registered, never written down, never shared. Go early. The smell coming from the oven is already half of it. Take a large one to split, a small one for yourself, and tell no one where you found it. Everyone claims to know the real place. This is it.

Oysters at the counter at dawn, facing the market. Where locals actually begin their morning.
Le Girelier
Remarquable
Bouillabaisse to order ahead, run by the same family for three generations. Terrace shaded by a plane tree, port-side.
