Chez Madeleine
Très bien
Six in the morning at Place aux Herbes. Madeleine opened this place in 1962; now her granddaughter Clarisse runs it, same counter, same light. You sit, order a dozen claires de Tarbouriech and a glass of white Provence wine, and watch the market assemble itself in front of you. This is how Tropeziens who know start their day. Come evening, close your eyes: house fish soup, tapenade the old way, grilled rascasse. Nothing fancy. Everything works.

Bouillabaisse to order ahead, run by the same family for three generations. Terrace shaded by a plane tree, port-side.
