La Vague d'Or

Remarquable

La plage de la Bouillabaisse. Not the port, not Place des Lices. A quiet stretch of shoreline west of the village, where La Vague d'Or sits as though it never considered being anywhere else. Trees overhead, open sea ahead, and that late-afternoon light that only happens here, from May through October, when the kitchen starts around 7:30pm.

Arnaud Donckele, born in Rouen in 1977, earned three Michelin stars for this address in 2013, then matched that with Plénitude, his Paris restaurant at Cheval Blanc. What he does here is rooted in the southern Mediterranean larder, ingredients pulled from the region, composed with a precision that rarely announces itself loudly. His sauces are the part people talk about most: he sometimes builds several, each working at a different register, to carry a single dish. Not to dazzle. To make every element count for something.

The room doesn't perform grandeur. You hear the water. Light shifts across the table while you eat. There is something quietly strange about sitting through cooking of this calibre with sand almost underfoot, and that strangeness is exactly what makes the place stay with you.

The menu sits at 380 euros. No softening that. But this is one of France's very few restaurants holding three stars since 2013, and probably the one with the least pompous setting among them. Worth it for an occasion that deserves the weight. Book well before the season opens.
