Le Banh Hoï
Très bien
Since 1968, under its tamped stone vaults, one of the rare tables where you can linger past midnight without feeling rushed. Refined Vietnamese cuisine, lacquered prawns with lime, beef loc-lac of the sort you remember. The place has seen them all drift through, Jacques Dutronc to Jack Nicholson, without changing a bulb. Book at least three days ahead; ask for table number 4, in the corner. It's the quietest one. The one they give the regulars.

La Ponche
Remarquable
La Ponche's table, where Sagan and Schneider spent their summers. Salt-tinged cooking, bay views, service that knows what it is doing.
Chez Madeleine
Très bien
Oysters at the counter at dawn, facing the market. Where locals actually begin their morning.
Le Girelier
Remarquable
Bouillabaisse to order ahead, run by the same family for three generations. Terrace shaded by a plane tree, port-side.
