Le Bistrot Saint-Tropez
Très bien
Place des Lices catches the last light here, and you settle into a chair on the terrace with a daube provençale or petits farcis in front of you. Across the square, old men bend over their boules. This is where you come without thinking when you want to eat well without emptying your wallet, which has become something of a miracle in this village.
The menu shifts each week with what the chef finds at market. Order the house pastis before lunch, it's infused with wild fennel from the inland hills.

La Ponche
Remarquable
La Ponche's table, where Sagan and Schneider spent their summers. Salt-tinged cooking, bay views, service that knows what it is doing.
Chez Madeleine
Très bien
Oysters at the counter at dawn, facing the market. Where locals actually begin their morning.
Le Girelier
Remarquable
Bouillabaisse to order ahead, run by the same family for three generations. Terrace shaded by a plane tree, port-side.
